Luca Manfe's Panettone French Toast
In a glass bowl, over boiling water, place the two egg yolks and gently whisk.
Place 2 tbsp of butter in a separate saucepan to melt.
While butter is melting, and egg mixture is thickening, place slices of bacon on a skillet to cook.
Add the melted butter to a smaller glass bowl and then transfer it into the whisked egg mixture with 1 tsp of salt.
Squeeze half of a fresh lemon into the egg mixture.
Continue whisking and flip bacon to cook fully.
Next, slice Panettone into thicker sections for toasting on the skillet.
Meanwhile fry an egg to add to the topping of the french toast later.
Make sure to place the egg mixture-now with lemon, butter, a pinch of salt-over heat again, and continue whisking.
Once Panettone is toasted, the egg is cooked, and the egg mixture has thickened, transfer all to a plate and enjoy!
